Our Chef-Instructors

The mother-daughter team of Longteine (known among friends and family by her nickname "Nyep") and Nadsa de Monteiro are responsible for the cuisine of The Elephant Walk. Each of them teaches cooking classes throughout the year - Nadsa at The Elephant Walk in Boston and Nyep [with occasional exceptions] at The Elephant Walk in Cambridge.

Nyep's focus tends to be on traditional Cambodian cuisine while Nadsa, more the maverick, will teach traditional and original Cambodian dishes as well as French and even "fusion" cooking, dishes that include techniques and ingredients of more than one culinary tradition.

Gerard Lopez is Nyep's son-in-law and Nadsa's brother-in-law. Chef at The Elephant Walk in Cambridge, born of a Spanish father in Bèziers in the Languedoc-Roussillon region of southern France. Gerard teaches primarily French and sometimes Spanish and fusion classes.

Our cooking classes are available for registration, and our cooking class gift certificatesare available for sale, ONLINE ONLY, and not in our restaurants.

All classes are hands on. They run on Saturdays, running from 10:30 a.m. until approximately 1:30 p.m., in one of our restaurants, and include a sumptuous lunch of the dishes prepared by the class.

"Gourmet & Gluten-Free!"

We discovered several years ago with the some education and encouragement from a number of earnest guests at The Elephant Walk who were also sufferers of celiac disease and looking for a safe, gourmet meal, The Elephant Walk's Cambodian core menu is already substantially gluten-free! (It certainly doesn't hurt that rice is safe...) With advance planning much of our French menu can be safely adapted as well.

After some gentle prodding from some of our guests who are celiacs, Nadsa took the obvious next step and prepared this Gluten-Free Cooking Class, now a regular part of our "curriculum." - Please join Nadsa as she shares just how easy it is to prepare a rich, exciting, gourmet, gluten-free meal with strong global influences. Just because some traditional pantry staples are off-limits doesn't mean celiacs can't eat just as well as the rest of us!

"Regional French Cooking: Basque"

Chef Gérard Lopez will take you to the southern Atlantic seacoast and the province of Gascony, perhaps most famous for being home to delicacies such as foie-gras and Armagnac. But there's much more to this rich province on the Spanish border. In part to honor his own father's Spanish heritage and also to indulge his own fascination with this proud Basque sub-culture, Gerard will explore the heady, Spanish-influenced Basque culinary tradition.

"French and Asian Tapas"

Gérard had wanted to teach a tapas class for a long time. But we always discouraged him, arguing that The Elephant Walk is French and Cambodian, not Spanish. Well, the fact that HE is half Spanish – along with a healthy dose of his hot Latin persuasion – finally convinced our sometimes shortsighted “committee” that teaching tapas isn’t so far-fetched after all – not to mention the fact that tapas, or “small plates” menus, are gaining momentum in a wide cultural array of dining rooms in America.

A celebration of Gérard’s Spanish heritage (Gérard is the son of a Spanish father and French mother), this class will explore the pleasure and excitement of meals composed of many small dishes, reflecting his personal heritage, including the influence of The Elephant Walk. Visuals and aromas that seduce, flavors that pop, and an experience that ignites passionate repartee – that’s what tapas is all about.

This class will cover: Exploring Indian influence and subtle divergences - Thicker braises using spice paste of Indian heritage (keing, khar, kroeung), and brothy soups and stews - The unique, earthy depth of Cambodian flavors

Redeeming a Cooking Class Gift Certificate?

To redeem a Cooking Class gift certificate, please select your class from among those currently scheduled and not yet sold out and contact Chef Gerard Lopez directly for his classes via email or telephone at 617.285.0410.

The details of the class will be confirmed to you by the Chef with whom you must confirm your attendance. Please contact your Chef if you have not received details for the class about a week prior to your class date.

Cancellation and Refund Policy

--- In order to give our instructors adequate time to fill last-minute empty seats, students are required to give The Elephant Walk 48 Hours Notice (for example, prior to 10:30 a.m. the Thursday before a Saturday class) in order to either cancel - and receive a refund - or move their registration to another class. If such notice is given within 48 hours of the class session, the registration is forfeit and cannot be refunded or reused.

--- The Elephant Walk Restaurant Group instructors reserve the right to cancel or postpone a class for any reason. In the event of such a cancellation, participants can register for another class of their choice in which space is available. Refunds are available on paid registrations upon request in the event of an instructor cancellation.

--- There are no refunds under any circumstances on Cooking Class Gift Certificates.
